I’m sure lots of people are trying to lose weight for bikini season or just want to try to get healthy, so why not post some yummy health conscious recipes to help each other out?

here’s mine!

Spinach Cheese Turkey Burgers

1lb of ground turkey (give or take) 1 garlic glove 3/4 cup fresh grated cheese 2 cups fresh chopped spinach about 6 diced mushrooms (totally optional) dash of pepper

Mix everything up in a big bowl and grill until cooked well.

(makes 8 small patties when using mushrooms as filler)

I’m on a super strict diet for health reasons, so I don’t eat a bun. They are yummy alone or on a lettuce bun but I’m sure they go well on bread buns too.

This is great idea! Here’s my recipe for hummus

2 cans chickpeas, rinsed and drained 1/2 cup tehini (it’s a sesame seed paste) 1/2 lemon juice or 1/4 water and 1/4 apple cider vinegar 5-8 cloves of garlic (you can do less, but I love me some garlic) 1 teaspoon cumin 1 tablespoon soy sauce a dash of cayenne pepper or hot sauce olive oil

Combine all ingredients into a food processor. While blending add an much olive oil as desired for consistency. It’s great by itself with raw veggies or pita bread, or you can use it on sandwiches in place of things like mayo.

super easy – ITALIAN TOAST

Get out some yummy pieces of 7 grain bread and preheat your over to 400F.

Grate some cheese, slice some tomato and chop or acquire some basil (dried or fresh).

Top bread with cheese, then tomato, then basil.

Bake 10 mins or until cheese is melted and tomato is barely starting to cook.

Amazing with coffee or tea. A healthy comfort food!!!

This is a super healthy comfort food!

Yellow grits, check the back for ratios but usually 1 cup uncooked grits 41/2 cups liquid. I usually do half whole milk and half water, but if you use skim milk I’d do all skim. You could also use 1 cup veggie or chicken broth if you like savory flavors (this dish is pretty savory as it is though). Prepare as directed. Once cooked and to desired consistency add 1 cup cheese or cheese bend: cheddar, American, Munster, ect work well. Add 4tbs nutritional yeast, or to taste. Add dash of salt.

This recipe provides a complete protein, B vitamins, A, D, etc. Great for breakfast with a fried egg on top or for dinner with chicken and waffles.

Let me add that this isn’t a diet/weight-loss recipe. But it is very healthy!

Here is what I made for dinner tonight:

Creamy Chicken & Veggie Soup

2 Cans of Chicken Broth 2/3 Cup Heavy Cream 3 Tablespoons Butter 1/2 Cup Chopped Red Bell Pepper 1/2 Cup Chopped Onion 1/2 Cup Chopped Mushroom 3/4 Cup string beans Cut in 1 inch pieces Asparagus cut into 1 inch peices salt, pepper, garlic, thyme about 2-4 chicken breasts, depending on preference.

Cook the chicken breasts first, then cook the pepper, onion and mushroom in the butter and add to the chicken broth and cream along with the uncooked asparagus and let the asparagus cook in the broth for about 7 mins. Then add everything else to the broth and let simmer for a few minutes.

last night we had salmon cooked in butter and meyer lemon juice with a bit of honey and asparagus and rice! our farmer’s market opens this saturday and i am waaaayyy excited!

I LOVE farmer’s markets! We have a “public market” open year round where you can get everything. Goodwill even has a mini branch inside. Then we have a proper farmers market that opens in market square every weds during the summer which I am excited for!

But to stick to topic:

Stuffed Bell Peppers

Half as many peppers as people ground turkey or beef (or combo of both) onion shredded cheese

Cut a bell pepper in half (long way) and take out all the inside junk Cook meat on skillet until done, add onion with meat (cooking the pepper is optional and depends on your taste, I like to cook it my boyfriend prefers it uncooked. you basically just flip it around on the skillet to cook it a little) stuff meat and onion in pepper top with cheese broil until cheese melts and turns slightly brown
