Today I was lazy and raided my pantry instead of going to the store. I improvised on potato green bean salad. You can make it with fresh ingredients, but I’m going to give you the fast way. =) 2 cans whole potatoes 1 can green beans 1 can tuna 5 hardboiled eggs Mustard Mayo Paprika Olive oil 1/4 butter Lemon pepper seasoning 1. Boil the eggs and set them aside. 2. In a large sauce pan add a liberal amount of olive oil, lemon pepper seasoning, and a 1/4 butter. Let it melt and simmer a little bit then add potatoes and green beans. (I sauteed the two for about 10 mins and then put them aside) 3. Combine hard boiled eggs, paprika, mayo, and mustard to taste. Add the can of tuna, green beans, and potatoes. 4. Stir well and it’s ready to serve. Next time I think that I will soak the green beans in red vinegar first. I felt like it needed an extra tang to it. (My bf doesn’t like pickles so that is where the substitution came in.) Altamonte Springs, Florida |

That’s a lot of eggs!!! ;-) Too funny! My bf said the same thing. “This is a little eggy you think?” Lol, I love eggs and I don’t like my potato salad to have chunks, I mash it until it’s whipped, kind of like publix makes theirs. Altamonte Springs, Florida |

I saw this Bon Appetit recipe, lentil and garlic sausage cassoulet, last night and kind of made my own stovetop (not baked) version. This is what I did: cooked and drained brown lentils, cooked the sausage, sauteed the onions/carrots/celery/garlic, then added the lentils and sausage back to the pot with some sage, thyme, parsley, a little bit of cayenne and salt and pepper to taste. If you check out the recipe, what I ended up doing was a lot simpler (and less time consuming) than what the recipe says, which I’m sure would turn out great, but I just didn’t have the time to bake the dish for 45 minutes in addition to the other steps/ingredients I left out! It turned out pretty well; I just wish that I used a different sausage maybe (went with a fresh store brand kielbasa) and drained off more of the fat from cooking it. Pittsburgh, PA |

Spinach Cheese Bake! 1 bag frozen spinach or you can use fresh spinach 1 egg 2 cups shredded cheese 3/4 cup heavy cream 1/4 of a small onion seasonings (I use black & red pepper) Cook the spinach in the microwave according to the package directions if you are using frozen spinach. Then mix everything really well in a glass baking dish. Sprinkle a bit of the cheese on top and bake at 350 for 30 mins or until the cheese on top gets slightly brown. This is great by itself or it’s also fabby wrapped in ham slices. :) Saint Petersburg , FL |

I got the idea for this chicken/turkey (I used chicken) pepper hash from a cookbook I think, but modified it just a little. The ingredients I used were: 3 chicken breasts filleted and diced (1 cm to 1/4 inch), 2 diced bell peppers (one red and one green), 1 diced banana pepper, potatoes (peeled and diced but don’t do this until you are ready to cook the potatoes otherwise they’ll turn brownish), the recipe said to use half potatoes and half sweet potatoes but I didn’t have sweet potatoes otherwise I would have, 1 onion, garlic (I tend to use more than what recipes say so however much you feel like), salt to taste, a little bit of chicken broth or water if needed, other [ground] pepper (I used chipotle). What I did first was cook the chicken, sprinkled with chili powder, until it’s just about done then set it aside. Next I sauteed the onion, garlic and peppers (also with some chili powder). The potatoes are tricky… they stuck to my pan so I think I’ll go with a non-stick one next time. Do those last and flip/turn them so they all cook well. You may need to add the chicken broth here and/or water to help scrape them up and help them cook faster. At the end combine everything and add salt to taste. Other things you may or may not want to add: cilantro, green onion, diced tomatoes, shredded cheese and… voila! Yum. During and after eating this I also thought adding eggs might be good too (casserole or omelet). Pittsburgh, PA |
